Housed in an elegant villa with landscaped gardens, Ébano reflects the vision of brothers Tomàs and Carles Mateu, both closely connected to Bellaterra and the Vallès Occidental.
After training at the renowned Hofmann School and working in acclaimed restaurants including Nerua and Alkimia, Tomàs Mateu developed a culinary philosophy inspired by the precision of cabinetmaking. Every dish is approached with patience, technical accuracy and a deep respect for the quality of the raw ingredients.
In the dining room, Carles Mateu curates a thoughtfully selected wine list, bringing together small independent producers alongside prestigious appellations to complement the restaurant’s cuisine.
Seasonal ingredients with Mediterranean roots
The menu follows the rhythm of the seasons, placing fresh market produce, daily seafood, carefully selected meats and locally sourced vegetables at its centre.
House specialities include the signature free-range chicken rice with botifarra de perol, confit cod jowl, and a classic steak tartare. Subtle Japanese influences appear in dishes such as tuna tataki and crispy sashimi, adding contemporary nuances while remaining firmly rooted in Mediterranean cooking.
