It officially joins the elite ranks of European foodstuffs whose soul, quality, and identity are inextricably tied to their native soil.
This newly minted PGI defines a elegantly rounded ham crafted exclusively from the hind legs of white-coated pigs (never Ibérico). Before entering the salting phase, each leg must meet rigorous standards: a minimum weight of 9 kg for bone-in hams (5.5 kg for boneless) and a luscious, protective fat cover over 0.8 cm thick. Furthermore, every single leg must originate from abattoirs holding certified animal welfare accreditation—ensuring that exceptional flavor begins with ethical care.
