David Romero’s career at the Majestic is no coincidence, but the natural evolution of a figure who intimately understands the hotel’s inner workings. After thirteen years at the establishment, the chef takes the helm of the gastronomic offering with a non-negotiable premise: respect for original flavors.
Trained in the tradition of family kitchens, Romero maintains that produce can be refined, but never masked. This philosophy is shared by a team of forty kitchen professionals seeking to elevate the diner’s experience through refined technique and restrained creativity, where the quality of the raw material remains the true protagonist of every dish.
SOLC: A dialogue between tradition and the avant-garde
The epicenter of this new era is SOLC, a restaurant recognized by the Michelin Guide since 2024. Located on the first floor of the iconic Passeig de Gràcia landmark, this space serves as an homage to deep-rooted Catalan cuisine, interpreted through a contemporary and elegant lens.
Romero’s vision for SOLC avoids artifice, focusing instead on reinventing familiar flavors through the excellence of local market garden produce.
