The genesis of Cocina Hermanos Torres is the culmination of a precocious vocation started at age fourteen in the finest hospitality schools. After decades of training at legendary establishments such as Alain Ducasse or El Racó de Can Fabes, the Torres twins opened this singular space on Taquígraf Serra street in 2018.
The concept breaks conventional hierarchies: it is not a restaurant with a kitchen, but a grand kitchen where tables have been set for guests. With 70% of the surface area dedicated to food preparation, the establishment operates as a living organism where high-end signature cuisine fuses with an environmental commitment that has earned them the Michelin Green Star. The industrial atmosphere feels warm thanks to a staging where light and spaciousness accompany a Mediterranean proposal based on scrupulous respect for seasonality.
The technical rigor of the culinary twins
Sergio and Javier Torres have built one of the most solid trajectories on the current scene, each bringing international expertise acquired in temples such as Akelarre or Philippe Rochat.
This symbiosis translates into a cuisine that masters both tradition and cutting-edge innovation, exemplified by their Gastrovac patent for vacuum cooking. Led by the brothers’ shared vision, the team is rounded out by figures such as Pablo Sacerdotte in front-of-house management and Koldo Rubio as sommelier. Their style, often described as a “cuisine of memories,” is characterized by minimal manipulation that seeks the essence of the ingredient. The constant presence of the chefs in the dining room, interacting with guests, adds a layer of authenticity that humanizes the high standards of a restaurant ranked at the top of The World’s 50 Best list.
Revolution Menu: a sixteen-step narrative
The sensory experience at Cocina Hermanos Torres is articulated through the “Revolution Menu” (€320), a succession of sixteen preparations that change with the natural calendar.
Dishes such as cured squid with poultry consommé and caviar demonstrate their ability to reinterpret surf and turf with contemporary elegance. The journey includes gems such as Galician crab with sour apple or suckling lamb matured with black garlic—creations where technical complexity is always at the service of pure palate enjoyment.
The wine pairing (€195), managed by a specialized team of sommeliers, is designed to enhance the nuances of a cuisine that is, above all, a tribute to fresh produce.
With its own pastry shop and bar, the menu closes a perfect circle where craftsmanship and technology coexist to offer a unique experience for the most demanding gourmet.
