The history of ABaC is a narrative of sustained growth toward perfection. Founded in 2000 on Carrer del Rec, the project made a qualitative leap in 2008 with its relocation to the current 19th-century villa on Avenida Tibidabo.
In this setting, which combines the elegance of a boutique hotel with the serenity of a private garden, the restaurant has evolved from a classical foundation into a contemporary haute cuisine destination. With a capacity for 56 guests, the space is characterized by an interior design dominated by white tones and sophisticated lighting that directs all focus to the table. This “urban oasis” has maintained the highest Michelin Guide distinction since 2017, establishing itself as an essential temple of global gastronomy in Barcelona.
The technical rigor of Jordi Cruz Mas
At the helm of this precision-driven operation is Jordi Cruz Mas, a chef who made history by becoming the world’s second youngest recipient of a Michelin star. Since joining ABaC in 2010, Cruz has instilled an inquisitive and evolutionary character into the kitchen, eschewing hollow exhibitionism to focus on product and culinary logic.
His style is defined by the impeccable execution of techniques such as sous-vide cooking and a deep respect for Catalan roots, reimagined through a lens of modern creativity. The team is completed by key figures such as Head Sommelier Stephanie Kippes, who manages a cellar of over 2,500 references, where local sparkling wines and aged Cavas play a fundamental role in the menu’s harmony.
Liquid narrative in a unique tasting menu
The ABaC experience is articulated exclusively through a tasting menu (€295) that the chef describes as “liquid and organic cuisine.”
The journey begins with a series of appetizers served directly in the kitchen, allowing diners to observe the rigor of the service firsthand. Iconic creations include the Japanese-Iberian wagyu sequence and the squid with Roman-style caviar—dishes where flavor intensity coexists with minimalist visual presentation. Special mention goes to the more conceptual offerings, such as the “Serenor” dessert or the tribute to The Little Prince, which complete a sensory cycle of textures and temperatures. The optional wine pairing (€160) elevates the proposal, transforming lunch or dinner into a profound analysis of the land and modern culinary avant-garde.
