Black garlic made from purple garlic through a long process of controlled fermentation. It has a sweet flavour with slight hints of balsamic and liquorice. It has a firm, soft texture.
During the fermentation process, the garlic turns black, its flavour softens and its aroma intensifies. This process produces bioactive compounds, such as S-Allylcysteine, which are not found in fresh garlic. These compounds have antioxidant, anti-inflammatory and antibacterial properties, and are believed to be responsible for the health benefits of black garlic.
One of the main benefits of black garlic is its ability to improve cardiovascular health. Studies have shown that it can lower blood pressure, improve cholesterol levels and reduce the risk of heart disease.
